Low Carb Simple Italian Salad

This simple Italian salad is a low-carb lunch option that’s easy to prepare; simple in steps, not favor. We love this simple keto-friendly recipe because it’s delicious, filling, and nutrient-rich! It makes the perfect side dish, appetizer, or add your favorite protein to the mix, and it can even be served as a main meal when you’re counting calories or following Keto Macros.

We called this our simple Italian salad because it’s what we imagine when we think of going to an Italian restaurant for a glorious bowl of all-you-can-eat salad. Roughly chopped romaine and radicchio accompanied by black olives, red onions, Roma tomatoes, cucumber, avocado, and golden pepperoncini.

We consider the Keto Macros Savory Balsamic Vinaigrette to be the best pairing with this salad blend. However, a couple of salad dressings from our recipe collection come to mind that would be complimentary; see where your palate takes you.

  • 1 oz Radicchio, Roughly Chopped
  • 1 oz Black Olives, Sliced & Canned
  • 1 oz Red Onion, Sliced
  • 1.5 oz Roma Tomato, Chopped
  • 2 oz Cucumber, Sliced
  • 2 oz Avocado, Chopped
  • 1 oz Golden Peperoncini, Seeded & Sliced

Spices & Seasonings

  • tsp Salt
  • tsp Black Pepper, Ground

Instructions
 

  • As you chop & slice the ingredients, start placing them in your salad bowl.
