The flavor reminds me of pizza, which I enjoy (& sometimes miss).

Typically we eat them as a side dish, but they have also been well-received appetizers by non-keto friends.

I usually make our “Mushroom & Jalapeño Cauliflower Rice Risotto” or keep it simple with Mushroom, Onion, & Garlic Sauté.

Instructions
Prepping
  1. Get the Mushrooms in some Water so we can clean them really well. I usually let mine soak for about 15 minutes & dunk the Mushrooms periodically while I chop up other ingredients. A good amount of dirt & debris will settle at the bottom. Then I run some water over them as I gently scrub off whatever may be remaining.
  2. Once the Mushrooms are clean, remove the Stems. We only need the Caps for this recipe. I would suggest checking out some of our other Mushroom recipes to use the Stems in, especially if you are meal prepping.
  3. Preheat the oven to 400° F (200° C)
Stuffing
  1. Give the Mushroom Caps a light coat of Avocado Oil.

  2. Next sprinkle the Salt, Pepper, & Garlic Powder all over them.
  3. Flip them over & custom fit a Jalapeño slice into the Mushroom Cap's hole, where the Stem used to be.

  4. Now let's stuff the diced up Prosciutto into each Mushroom.

  5. Fill the Mushrooms with the Chèvre Cheese.

  6. Add a Black Olive slice to the top & lightly push it into the Chèvre Cheese & Stuffed Mushroom.

Roasting
  1. Place the Stuffed Mushroom Caps onto a lightly Avocado Oiled cookie sheet.
  2. Let them roast in the over for about 30 minutes.
