I was disappointed in myself when I tried this one.

Absolutely crushed that after following a low carb diet for over 11 months, I had NOT tried a Chia pudding until then. It instantly reminded me of tapioca pudding, except these are about half the size. Their texture was velvety, similar to a mousse.

I could have sat & ate the entire bowl. This low carb pudding is everything from being simple, containing chocolate, & did you see those Net Carbs!?

Instructions
  1. Pour the Almond Milk & Heavy Cream into your mixing bowl.
  2. EXCEPT for the Chia Seeds, add in the Natural Cocoa Powder, Peanut Butter, Vanilla Extract, & Stevia Powder to the mixing bowl.
  3. After those ingredients are all mixed together, add in the Chia Seeds until they are all submerged.
  4. Continue to stir the Chia Pudding Mixture for every 5 minutes for about 15 minutes.
  5. Refrigerate for about an hour or until the Chia Pudding has firmed up.
